    ..I hate to use most pre-made stuff if I can make it myself. Here is what I use for "Picante Sauce"...

    --=== Galveston's Picante Sauce ===--

    Ingredients:
    1/2 Onion (Chopped Fine)
    1 1/2 tablespoons FRESH Lime juice
    6 Plum Tomatoes (Use FRESH if you can!)
    2 Jalapeno Peppers (Seeded and cut in half)
    1 Garlic clove (peeled!!)
    1 Cup chopped fresh Cilantro


    Soak the chopped onion in the Lime juice for at least TEN minutes.
    While that is soaking throw the Tomatoes,Jalapeno halves,and the Garlic in a skillet until they are slightly charred. Add the garlic about midway so it doesn't get bitter.
    Remove the tomato skins.
    Put the mix from the pan into a blender or food processor and run it about ten seconds...not too long as you want it to remain a little chunky

    Pour it into a bowl and add the Onions that have been soaking along with the Lime juice and the chopped up Cilantro.
    Taste it and add salt to taste....
    You can keep it in the 'fridge for up to a week....but mine NEVER lasts that long!

    Similar salsa to the one I make. I substitute the jalapeños with habaneros though.

    ....here is a pretty good recipe for cooking some Pork Chops on the grill. If you can use the cane vinegar as it really works as far as the taste goes. You can usually find it in a Philippino store or an Asian grocery...

    --=== Cane Vinegar Pork Chops ===--

    The Stuff:

    2 pounds bone in pork chops
    1/2 Cup Cane Vinegar (You can substitute Cider vinegar if you can't find it!)
    1 teaspoon worcestershire sauce
    1 teaspoon Onion Salt
    1 teaspoon Garlic (granulated)
    1 teaspoon Lemon Pepper
    1 tablespoon smoked Paprika

    Put the pork chops in a large baking dish and sprinkle with the cane vinegar and the worstershire sauce. Make sure both sides are coated and them add the onion salt,garlic,and the lemon pepper. Make sure both sides are coated with the shizz and let it sit for at least an hour or more.

    Start your fire in either a covered grill or your Smoker. Wait until the coals are white and then dust the chops with the paprika for some color. Cover the cooker.

    Turn the chops every once in a while and move them from the hotter part to the cooler part to make sure they cook evenly. Cook them to the way you like them.
    15 minutes for medium and 30 minutes for well done.

    If you have a smoker like mine you can finish the chops in the smoker...

    ....well, since we don't have Lobster down here on the coast the closest thing I can come up with is "Mudbugs". We don't BBQ them down here at all....but boil them with some crab boil, potatoes,sausage,and fresh corn. We call it a "boiling pot". When it's done you just dump the whole thing onto a table outside and dig in!
