    I was waiting to see what I knew you would add to this,thanks.will give them both a try,now a touch? tsp or a little less to start with?

    It depends on a couple of things...How big a batch you are making and how hot/spicy you want it. I just add what I think is right and then taste it. Remember, the heat should slowly build and not blow you out of the water right off the top! Some prefer not to have any heat...but the flavor from a good Chipotle pepper is mainly what you are adding...not the heat! Heat is just an added bonus!

    Thanks Galv,again.

    And Bryan the Boss (my Wife) is from the north west so I'll ask her about
    any Salmon. We took a cruise to Alaska last may and I'm sure she got her fill
    of smoked Salmon.She does Salmon patties that take over the house for days.

    With "Mothers Day" coming up this Sunday I might as well share what I have planned. Cooking over at my little brothers so I can get the help of the "clan"!

    Salsa Verde

    Spanish/Puerto Rican Rice like my grandmother used to make

    Fajitas (Beef) ten pounds...

    Sixteen racks of Baby Back Ribs....

    Refried beans or Alachara (Charo Beans for you fellow "Gringo's)

    Iced Tea


    Cold Beer of many varieties.....

    Maybe some "Tater Salad"....


    ...and whatever anyone else decides to add to the table!
